Few places conjure Mediterranean vibes better than the South of France. In the Coteaux d’Aix-en-Provence appellation (it is pronounced “ex”), no vines are more than 20 miles from the sea. Cicada’s Song is made with a highly local red grape called Tibouren and a touch of Vermentino, another stalwart of Med wines. They make what you might consider the Platonic ideal of Provencal rosé. The wine evokes the region’s 3,000 hours of sunlight per year and the scent of sun-baked wild herbs. For extra credit in high school French, I made something called Tomates à la Provençale. It’s a simple dish of baked tomatoes and Herbes de Provence. That plus some crusty bread and a bottle of Cicada’s song? Mais oui!
