Domaine Matassa "Coume de l'Olla Blanc"

Made primarily from old-vine Macabeu — a grape of profound mineral depth when grown on poor soils and farmed without compromise — this wine is certified biodynamic and made with minimal intervention in the cellar. It pours a deep golden amber, with aromas of beeswax, dried apricot, white flowers, toasted hazelnuts, and a bracing saline minerality. On the palate it is simultaneously rich and taut, with a textured, almost waxy mouthfeel and a long, stony, oxidative finish that lingers well after the glass is empty.
